Simple Stuffed Salmon

All  you need is

2 pound salmon fillet, butterflied
1 pound fresh spinach
3 tablespoons butter or margarine
1 tablespoon chopped garlic
4 tablespoons of Italian dressing or olive oil
½ tablespoon salt
½ tablespoon black pepper
½ tablespoon paprika
½ tablespoon fresh chopped parsley

  1. Preheat oven to 400° F
  2. Wash spinach well and set aside. In a large pan sauté garlic in butter for 3 to 5 minutes.  Add spinach and seasoning  and let it simmer for a few minutes. Remove from heat and set aside.
  3. Spoon the spinach mixture onto the open, seasoned butterflied salmon fillet.
  4. Once the mixture is settling on the salmon, season with 1tablespoon of Italian Dressing. Close butterflied fillet and top with the rest of Italian Dressing, paprika, and chopped fresh parsley.
