Turkey Bacon and Egg Waffle Omelette

  • 1 chopped tomato
  • 1/2 cup chopped green bell pepper
  • 1/3 cup chopped yellow onion
  • Cooking spray
  • 1 cup (about 4 pieces) ย chopped cooked turkey bacon
  • 8 large eggs
  • 1/3 cup milk
  • Salt and ย black pepper
  • 1/2 cup shredded sharp cheddar cheese
  • Chopped chives

Directions

  1. Preheat waffle iron.
  2. In mixing bowl, combine veggies, egg, bacon, cheese and salt and pepper.
  3. Spray waffle iron with non-stick cooking oil. ย Pour mixture between two waffle wells.
  4. Let waffles cook about 5 minutes or until theyโ€™re golden brown and cooked through.
