๐ŸŒถ Stuffed Red Peppers ๐ŸŒถย 

  • 6 bell peppers
  • ยฝ cup grains (rice or quinoa or a mix of both) uncooked
  • 2 tablespoons extra virgin olive oil
  • ยฝ onion, finely diced
  • 2 cloves garlic, finely diced
  • ยฝ lbs ground turkey
  • 1 jar of marinara sauce
  • salt and pepper to taste
  • ยผ teaspoon crushed red peppers
  • 1 teaspoon dried oregano
  • ยฝ teaspoon dried basil
  • Cajun seasoning to taste
  • 1 cup shredded cheese, divided

 

  1. Preheat oven to 375ยฐ.
  2. In a large skillet over medium-high heat, heat oil. Cook turkey until starting to brown, 3 to 4 minutes. Add onion and garlic and cook until turkey is golden and cooked through, 4 minutes more. Season to your taste.
  3. Meanwhile, cook rice according to package directions.
  4. In a large bowl, combine browned turkey, cooked rice, marinara, and 1 cup shredded pepper jack and season with cajun seasoning.
  5. Spoon mixture into hollowed peppers and top with remaining 1/2 cup pepper jack. Bake until peppers are tender and mixture warmed through, 28 to 30 minutes๐Ÿ˜‹ Yummy ๐Ÿ˜‹
