No Crust Salmon Croquettes

1 lb fresh salmon or 2 cans

Olive oil

Garlic salt (Or seasoning of your choice)to taste

Black pepper, to taste

1 medium yellow onion (1 cup), finely diced

Β½ red and green bell pepper, seeded and diced

1 cup Panko bread crumbs

2 large eggs, lightly beaten

1 tsp Worcestershire sauce

2 lemons (squeeze out juice for mix)

Preheat Oven to 425˚F. Line a rimmed baking sheet with parchment or foil . Place salmon skin-side down, brush with olive oil and season with garlic salt and black pepper (or seasoning of your choice)

Bake uncovered for 15 -20min or just until cooked through. Remove from oven, cover with foil and rest ten minutes. Remove skin, flake salmon with forks, remove any bones, and cool to room temp while prepping remaining ingredients.

In a large mixing bowl, combine cooled flaked salmon, lemon juice, onion and peppers , bread crumbs, eggs, Worcestershire sauce, garlic salt, black pepper. Stir to combine then form into 13-14 patties.

Heat 2tbs of oil in a large skillet over medium low heat. Cook 4 patties until browned, about 5 minutes on each side. Remove to a baking sheet, cover with aluminum foil, and keep warm in the oven while you cook the other four, using the remaining oil.
