Cajun Chicken Breast Stuffed with Pepper Jack Cheese & Spinach  


2 10-oz. bag fresh baby spinach
1/2 cup half and half
1/2 cup shredded Chihuahua Peppers Jack cheese
2 cloves garlic, minced
4 boneless chicken breasts
Cajun seasoning

Preheat oven to 350 degrees.

In a sauce pan saute spinach and garlic

In a small bowl combine cheese,cooked spinach and garlic .Season mixture with garlic powder, salt & pepper.Mix with a fork until well combined.

Lay your chicken breast down on a cutting board and slice it in half so you have two thin halves.

Lay all 4 pieces between 2 sheets of plastic wrap. Take the flat side of a meat tenderizer and pound the chicken until very thin.

Sprinkle Cajun seasoning on both sides of the chicken.

Scoop about 2 tablespoon of the spinach mixture on the chicken and spread it to coat the chicken.

Fold each piece of chicken and hold in place with a toothpick

In a cast iron pan heat remaining spinach mix and half and half

Place chicken in cast iron pan with remaining spinach mix

Bake for 25-30 minutes.
