Chicken Chili

 

  • 1 cup of  onions
  • 1 TBS minced garlic
  • 4 cups shredded chicken
  • 6 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • 7 oz can diced green chiles
  • 1 bag of frozen corn
  • 2 tsp cumin
  • 1 tsp oregano
  • 1½ tsp coriander
  • ½ tsp cayenne pepper
  • 1 tsp salt
  • ½ cup shredded cheese (of your choice) optional

  1. In a large pot, boil chicken for 35-40 minutes. remove and shed. (I use the broth from the boil  chicken as my broth base)
  2. Saute your onion and garlic for about 5 minutes with a little oil over medium heat, stirring occasionally.
  3. Add in your shredded chicken, white beans, green chiles, corn, and spices to the chicken broth.  Allow to simmer for about 30 minutes.
  4.  Add cheese  stir to combine. Simmer for another 15 minutes.

Optional Toppings:

  • cilantro
  • avocado
  • tortilla strips
  • shredded cheese
  • sour cream
